While there are many different types of espresso beverages, the following are the classics.
Ristretto (‘strong, condensed’) A single dose, 4 - 5 second pre-infusion followed by a approximately 20 second extraction, resulting in approximately 20 mls of espresso beverage with a thick golden layer of foam. Intense flavour and long aftertaste. Served in a preheated Piazza D’Oro espresso cup.
Doppio Ristretto A double dose, 4 - 5 second pre-infusion followed by a approximately 25 second extraction resulting in approximately 40 mls of espresso beverage with a thick golden layer of foam. Intense flavour and long aftertaste, with double the strength. Served in a preheated Piazza D’Oro espresso cup/macchiato glass.

Doppio Espresso A double dose, 4 - 5 second pre-infusion followed by a approximately 25 second extraction, resulting in approximately 80 mls of espresso beverage with a thick golden layer of foam. Intense flavour and long aftertaste, with double the strength. Served in a preheated Piazza D’Oro lungo cup.
Macchiato An espresso ‘stained’ with a dash of milkfoam. Served in a preheated Piazza D’Oro espresso cup/macchiato glass. Latte Macchiato Three layers, 1/3 hot or cold milk, 1/3 espresso (50 ml) and 1/3 milkfoam. Served in a preheated Piazza d’Oro caffè latte cup/macciato glass
Cappuccino 1/3 espresso (50 ml), 1/3 steamed milk and 1/3 milkfoam. Served in a preheated Piazza d’Oro cappuccino cup |
